Lemon Mustard Chicken
I can't remember where this one originally came from (so what else is new?) but I've tweaked it so much that I feel as though it's really my own, anyway. If you love mustard and garlic, you're going to enjoy this one.
MUSTARD LEMON CHICKEN
1 (4 to 6-lb.) roasting chicken
1/4 cup Dijon mustard
2 Tbsp. lemon juice (juice of one lemon)
1 Tbsp. olive oil
1 tsp. (or more!) minced garlic
salt and freshly ground black pepper to taste
Mix mustard, lemon juice, olive oil and garlic in a small bowl. Rub chicken, inside and out, with salt. Set chicken in a greased baking dish/roaster pan. Brush chicken with mustard/lemon juice/olive oil/garlic mixture. Sprinkle with salt and pepper.
Preheat oven to 450� F. Place chicken in oven and roast for 30 minutes. Baste with mustard mixture.
Reduce oven temperature to 350� F. and continue roasting until done, basting every 10 to 15 minutes.
I usually cook this for a total of 75 to 90 minutes.
