    Peanut Brittle

    List of Ingredients


    • 2 cups sugar
    • 1 cup light corn syrup
    • 1/3 cup water
    • 1 cup raw peanuts
    • 2 teaspoons butter
    • 1 teaspoon salt
    • 2 teaspoons baking soda


    Instructions


    1. Combine sugar, corn syrup and water. Cook slowly until sugar dissolves and mixture reaches 240 degrees, about 30 minutes.


    2. Add raw peanuts, cook until 295 degrees, about 20 to 30 minutes.


    3. Do not allow mixture to boil over.


    4. Stir constantly during the following additions:


    5. Remove from heat, add butter. Stir until butter has melted completely into sugar mixture.


    6. Add salt and baking soda. Stir quickly. The sugar/peanut mixture will change colors and rise up in saucepan.


    7. Pour mixture evenly onto well buttered, shallow pan. Spread as evenly as possible. Work quickly but carefully. Mixture is hot.


    8. When completely cooled, break into pieces. Store covered.
