    Couscous and Apricot Salad

    List of Ingredients


    • 2 cups orange juice
    • 1/2 cup water
    • 1 teaspoon salt
    • 10 ounces couscous
    • 1/2 cup dried apricots
    • 1/2 cup currents
    • 2 tablespoons raspberry/red wine vinegar
    • 1 cup, chopped/seeded cucumber
    • 1/2 cup chopped green onion
    • 1/2 cup pistachio nuts
    • 1/4 cup chopped fresh mint
    • 1/4 cup lemon juice
    • 2 tablespoons olive oil


    Instructions


    1. In a saucepan, combine 1 1/2 cups orange juice and 1/2 cup water. Bring to a boil. Stir in couscous. Remove from heat. Stir couscous and let stand for five minutes. Fluff and place couscous in large bowl.

    2. Combine 1/2 cup orange juice with vinegar. Add dried apricots and currents. Bring to a boil. Let stand for 15 minutes. Discard cooking liquid.

    3. Add all remaining ingredients to salad. Mix and toss.
