    Serve this over rice or pasta! Add a salad and a loaf of crusty Italian bread or garlic bread and you have a marvelous little dinner. Great for company too!

    List of Ingredients




    3lbs. of chicken ( you can use legs, breasts or thighs)
    4 Tablespoons extra virgin olive oil
    1/2 cup chopped onion
    1 bay leaf
    1 teaspoon of dried thyme
    1 teaspoon of dried oregano
    1 teaspoon of poulty seasoning
    1 cup of sliced mushrooms
    1 red bell pepper, seeded and cut into strips
    1/2 cup red wine
    14.5 oz. can of Tomato sauce
    2 cloves garlic, minced
    1 cup of chicken broth

    Recipe



    Drizzle a little olive oil into your crock pot using just enough to cover the bottom (about 1/4 cup). Then place your chicken pieces into the crock pot. I prefer to thaw my chicken and season with poultry seasoning before placing them in the pot. You may also add your chicken pieces frozen or slightly cooked if you prefer. That's up to you. Once my chicken pieces are in my crock I then add all of the remaining ingredients. Cover & cook on low approximately 8 to 10 hrs. You can also cook on high for about 6 hrs. Note: Just make sure your crock pot is plugged in! :)
