    Sisters at Our lady of Grace Convent

    Recipe Introduction


    This recipe was given to me by one of the Sisters residing at Our Lady of Grace Convent. It was a Sunday dinner, convent favorite! Serve with a basket of fresly baked biscuits! Yum!

    List of Ingredients




    Seasoning Mix:
    2 tsp. paprika
    2 tsp. garlic powder
    2 tsp. dried basil
    1 tsp. ground mustard
    1 tsp. cumin
    1 tsp. poultry seasoning
    freshly ground pepper

    2 Tbsp. butter
    1 3/4 cups chopped onion
    1 cup chopped green pepper
    1 roasting chicken
    1/4 cup flour
    2 cups chicken broth

    Recipe



    Mix the seasoning ingredients in a small bowl and set aside. Melt butter in a preheated large skillet. Add the chopped onions and peppers and 3 Tbsp. of the seasoning mix. Cook until the onions are a nice golden color. Cool. When the seasoning mixture is cool enough to handle, stuff the cavity of the chicken with this mixture. Next sprinkle the outside of the chicken with the remaining seasoning mix and rub in well so it sticks. Place the chicken in the crockpot and add the broth. Cover and cook on Low for 6 hours.
    When the chicken is done, empty the mixture and juices from the cavity into a saucepan. Whisk in the flour and 1 cup of the broth from the slow cooker.Cook over a high heat on stovetop until thickened. You can add more stock if you want a thinner gravy.
    Slice chicken and serve with gravy and don't forget the biscuits! Enjoy! :)
