    Pennington's Onion Rings

    1 large onion, sliced thin
    1 cup milk (for soaking)
    2 cups milk (for batter)
    1 egg
    flour (enough to make a thin batter)
    more flour for rolling wet onions in

    Recipe

    Slice onion into thin rings and place in a bowl of milk to soak for 1 hour.

    Make batter with 2 cups milk, 1 egg and enough flour to get the consistency of pancake batter.

    Put a handful of rings into the pancake batter and allow excess to drip off.

    Drop wet onions into a pie pan with flour and get them fully coated. Shake off excess flour and fry until golden brown.
