    Butterscotch Muffins

    List of Ingredients
    2 cups flour
    1 cup sugar
    1 small pkg instant butterscotch pudding
    1 sall pkg. instant vanilla pudding
    2 tsp. baking powder
    1 tsp. salt
    1 cup water
    4 eggs
    3/4 cup oil
    1 tsp. vanilla extract

    TOPPING:

    2/3 cup brown sugar
    2 tsp. cinnamon
    1/2 cup chopped pecans


    Instructions

    In a mixing bowl, combine the flour, sugar, pudding mixes, baking powder and salt.

    In a seperate bowl mix the water, eggs, oil and vanilla.

    Stir egg mixture into dry ingredients til just moist.

    Fill paper lined muffin cups 2/3 full

    Combine topping ingredients and sprinkle over batter in muffin cups.

    Bake @ 350 for 15-20 minutes.

    Cool 5-10 minutes before removing from pans.
