Coca-Cola Cake
Cake:
2 cups sugar
2 cups all-purpose flour
1 1/2 cups miniture marshmallows
1/2 cup butter
1/2 cup oil
3 tsp cocoa
1 cup room temperature Coca-Cola
1 tsp baking soda
1/2 cup buttermilk
2 eggs
1 tsp vanilla
Frosting:
1/2 cup butter
3 tbsp cocoa
6 tbsp room temperature Coca-Cola
1-16 oz. box powdered sugar
1 tsp vanilla
1 cup chopped pecans
To make cake:
Preheat oven to 350 degrees F. Grease well a 9 by 13 inch pan.
In a large bowl, sift flour and sugar; add marshmallows. In a sauce pan, add butter, oil, cocoa, and Coke. Bring to a boil and pour over dry ingreidents in bowl stirring well. Add soda to buttermilk just before adding to batter. Add eggs and vanilla. Mix well. Pour into prepared pan and bake for 35 to 40 minutes. Remove from over and frost immediately.
For Frosting:
Combine butter, cocoa and Coke in a saucepan; bring to boil.Pour over powdered sugar and blend well.
Add vanilla and pecans. Pour over hot cake. Let cake cool.
