    Rainbow Poke Cake


    1 pkg. Betty Crocker supermoist white cake mix
    1 pkg. (3 oz) raspberry jello
    1 pkg. (3 oz) lime jello
    2 cups boiling water
    1- 8 oz. Cool Whip, thawed

    Rainbow Poke Cake

    Prepare cake mix as directed on the pkg. Pour batter into 2 round pans, 8 or 9". Bake as directed, cool 10 minutes. Remove from pans, cool completely. Place cake layers, top sides up, back in clean pans: prick each layer with a utility fork at 1/2" intervals. Pour 1 cup boiling water over raspberry jello in bowl, stir until dissolved. Spoon raspberry jello over 1 layer. Repeat with the lime jello. Refrigerate 3-4 hours. Dip layers in warm water 10 seconds, invert on plate, gently shaking to loosen. Spread layer with 1 cup Cool Whip. Frost with remaining topping. Refrigerate.

    This is very pretty with the read and green jello for Christmas, but you could use any two jello flavors that are compatible.
