    Triple Decker Strawberry Cake

    Cake
    1 package white cake mix -- (18.25-ounce)
    1 package strawberry gelatin -- (3-ounce)
    4 tablespoons all-purpose flour
    1 cup vegetable oil
    1/2 cup sugar
    1/2 cup milk
    4 large eggs
    1/2 cup finely chopped fresh strawberries and
    juice
    1 cup halved fresh strawberries for garnish
    Strawberry Cream Cheese Frosting
    8 ounces cream cheese -- softened
    1/4 stick butter
    1 cup sugar
    1 cup powdered sugar
    1 teaspoon vanilla
    16 ounces cool whip
    1 pint strawberries -- chopped


    Preheat oven to 350 degrees. Lightly grease three 9-inch round cake pans with solid vegetable shortening, then dust with flour, shaking out excess.

    Place the cake mix, gelatin, flour, oil, sugar, milk, eggs, strawberries and their juice in a large mixing bowl and blend with electric mixer on low speed 1 minute. Stop the machine and scrape down the sides of the bowl with a rubber spatula. Increase speed to medium and beat 2 minutes more, scraping down the sides again if needed. Divide the batter among the prepared pans and place them in the oven

    Bake until cakes spring back when lightly pressed with your finger and just start to pull away from the sides of the pan, 33 to 35 minutes. Be careful not to over-bake the layer on the highest rack. Remove the pans from the oven and place on wire racks to cool 10 minutes. Run a dinner knife around the edge of each layer and invert each onto a rack, then invert again so the cakes are right side up. Cool completely, 30 minutes more.

    To assemble, place one cake layer right side up on a serving platter. Spread the top with frosting. Repeat with remaining layers; the cake should now resemble a torte with the sides left unfrosted, or, if desired, sides can be frosted. Decorate the top with halved strawberries. Serve at once or chill.

    For Frosting:
    Cream butter and cream cheese. Add sugars. Blend well and add vanilla. Fold in Cool Whip. Add strawberries until well blended
