    Cheese, Bacon and Egg Bake

    1/2 loaf unsliced white bread
    125 gm cheddar cheese, grated
    5 slices bacon, cut in 2.5 cm pieces
    3 shallots, chopped
    1 green pepper, chopped
    6 eggs
    2 cups milk
    1 tsp dry mustard
    1 tbsp mayonnaise
    pepper to taste
    1/2 tsp basil leaves, dried
    1 red pepper, chopped

    Cheese, Bacon and Egg Bake

    "This is a very tasty and easy to make recipe - Cheese, Bacon and Egg Bake. The whole dish can be prepared, covered, refrigerated overnight and baked when you are ready the next day. It can be baked on the same day, but the flavour is much better the following day!" (Serves 6.)


    Remove the crusts from the bread, cut into 2.5 cm cubes, and place the bread in a single layer in a baking dish. Sprinkle with the grated cheddar cheese. Fry the bacon until it is crisp and brown in colour. Drain and place over the cheese. Top with the shallots and green pepper. Whisk the eggs with a fork and add the milk, mustard, mayonnaise, pepper and basil. Pour over the bread mixture and top with the red pepper. Cover with plastic food wrap and refrigerate overnight. Next day, bake uncovered in a 350 degree Fahrenheit oven for 50 to 60 minutes.
