    Salmon Crown

    1 can (7 1/2 to 8 1/2 ounces) salmon, undrained
    1/4 cup chopped celery
    2 tbsp. chopped onion
    1/4 cup grated sharp Cheddar cheese
    2 tbsp. mayonaise
    1 tbsp. lemon juice
    1/2 tsp. dried dill
    Dash freshly ground pepper

    Biscuit Dough:
    2 cups all purpose flour
    4 tsp. baking powder
    2 tsp. granulated sugar
    1/2 tsp. salt
    1/2 cup butter or margarine

    3/4 cup milk

    Salmon Filling:
    In medium bowl, flake salmon. Add remaining Salmon Filling ingredients. Mix well; set aside.
    Biscuit Dough: In bowl, combine flour, baking powder, sugar and salt. Cut in butter until mixture resembles coarse cornmeal. Stir in milk to make a soft dough. Knead on floured board 10 times. Roll out to 16" x 13" rectangle.

    Spread salmon filling evenly over dough to within about 1/2-inch of edges. Starting with long edge, roll up, jelly roll style. Bring ends together to form a ring. Place on greased baking sheet. Slit dough 3/4 through from outside edge to center at 1/2-inch intervals. Gently pull cuts open. Bake at 375� for 30 to 40 minutes, or until the biscuit dough is golden brown.
