    Vanilla Pork

    Ingredients

    1 vanilla pod, broken into pieces
    1 garlic clove, thinly sliced
    600 g loin of pork, boned, rolled and tied,
    and with incision in skin for seasonings
    vegetable oil
    5 tbsp white wine vinegar
    3 tbsp white rum
    250 ml unsweetened coconut milk
    Freshly ground sea salt and black pepper to taste
    Instructions

    Place a piece of vanilla pod and thin slice of garlic in the skin of the
    pork. Add a little oil to a flameproof casserole dish and heat. Add the
    pork and seal.

    Place lid on dish and cook in a preheated oven at 180C for 20 minutes.
    Pour off the fat from the meat. Deglaze with the vinegar and rum.
    Reduce the sauce on the stove for a couple of minutes. Stir in the
    coconut milk and seasoning to taste.

    Return casserole dish to oven and cook without the lid for a further
    15 minutes or until pork is tender.
