    Orange Chicken Oriental



    Ingredients:
    4 boneless, skinless chicken breasts
    1/4 tsp ground ginger
    2 Tbsp vegetable oil
    1 small garlic clove
    1 can (8 1/4 ozs.) pineapple chunks, undrained
    1 cup orange juice, divided
    1 envelope low sodium instant chicken bouillon
    2 Tbsp wine vinegar
    1/3 cup sliced celery
    1 small green pepper, cut into 1/4-inch strips

    1 small onion, sliced
    1 small tomato, cut in wedges
    2 Tbsp low sodium soy sauce
    1 Tbsp sugar
    3 Tbsp flour

    Servings: 4

    Instructions:
    Sprinkle chicken with ginger. Heat oil in large skillet, over medium heat; add chicken and garlic and cook 5 minutes. Add liquid from canned pineapple, 3/4 cup orange juice, bouillon and vinegar. Cover; simmer 10 minutes. Add celery, green pepper, and onion. cover, cook 5 minutes longer. Add tomato wedges and pineapple chunks. In small bowl, blend together soy sauce, sugar, flour, and remaining 1/4 cup orange juice. Add to skillet and cook, stirring constantly, until mixture thickens and comes to boiling; cook 1 minute longer. Serve over hot cooked rice, if desired.
