    HEARTY TATER SOUP

    6 Medium potatoes, peeled and chunked
    2 carrots, diced (optional)
    6 celery stalks, diced
    2 quarts water
    1 onion, chopped
    8 Tbsp. butter/margarine
    6 Tbsp. all-purpose flour
    1 tsp. salt
    1/2 tsp. pepper
    1 1/2 cups milk

    In large kettle, cook potatoes, carrots,(optional) and celery in water till tender, about 20 minutes. Drain, reserving liquid and setting vegetables aside. In the same kettle, saute onion in butter till soft. Stir in flour, salt and pepper; gradually add milk, stirring constantly till thickened. Gently stir in cooked vegetables. Add 1 cup or more reserved cooking liquid till soup is desired consistency. This is another good one to have a pone of cornbread handy. Really warms you up inside on a cold winter day.
