Pumpkin Streusel Cake

STREUSEL:
� 1/2 cup packed brown sugar
� 1 tsp cinnamon
� 1/4 tsp pumpkin pie spice
� 2 tsp soft butter or marg
CAKE:
� 3 cups flour
� 2 tsp baking soda
� 1 Tbs cinnamon
� 1 tsp salt
� 1 cup soft butter or marg
� 2 cups sugar
� 4 eggs
� 1 cup pumpkin
� 1 1/2 cups sour cream
� 1 tsp vanilla
Recipe
Preheat oven to 350*.
-Grease and flour whichever pans you'd be using. (this recipe calls for a bundt cake pan).
-For streusel: mix ingredients and set aside.
For cake:
-Mix together dry ingredients in a med bowl.
-In another large bowl, beat eggs and sugar w/ mixer on med till creamy.
-Scrape bowl.
-Add eggs 2 at a time, beating well after each addition.
-Beat in pumpkin, sour cream and vanilla.
-Gradually beat in flour on low till blended.
-Spread 1/2 batter into bundt pan.
-Sprinkle streusel mix over top, making sure streusel does not touch sides of pan.
-Top w/ remaining batter, making sure batter touches sides of the pan.
-Bake 55-60 min till wooden pick tests clean.
-Cool in pan on wire rack 30 min.
-Remove from pan to wire rack to cook completely.
-Dust with powdered sugar, if desired.
