    Shrimp Carbonara for One

    List of Ingredients


    • 1/2 lb. tiger shrimp, peeled
    • Fettucini for one cooked, rinsed and drained
    • 1/2 tsp. minced garlic
    • 2 eggs beaten
    • 1/4 cup cream
    • 1/4 cup rich stock ( chicken is ok... seafood is better if you can find it)
    • salt and pepper to taste
    • 3 Tbls. Olive Oil
    • 1/4 cup grated Parmesan Cheese
    • 1/4 cup grated Romano Cheese


    Instructions


    1. Heat the oil in a medium pan. Not too hot.
    2. Put garlic in the pan and let it simmer for a couple of minutes.
    3. Add the stock and simmer til it reduces to a little over one half
    4. While the sauce is reducing, salt and pepper the shrimp.
    5. Turn the heat to medium and add the cream.
    6. Toss the shrimp with the sauce and spread them out.
    7. As soon as they appear pink all over, flip them over.
    8. About 10 seconds after flipping the shrimp dump in the pasta, followed by the egg and cheeses.
    9. Toss for a minute or two so that the eggs are really cooked.
    10. Eat and enjoy !!!
