    Fiesta Chicken Drumsticks

    List of Ingredients


    • 1 Tbls. oil
    • 6-8 drumsticks
    • 3 green onions; sliced thin
    • 1 cup water
    • 1 cup uncooked long grain rice
    • 2 cans Ro*Tel tomatoes and green chilies
    • 1/2 cup shredded cheddar cheese


    Instructions


    1. Heat oil in electric fry pan and cook chicken until golden brown on all sides.
    2. Remove chicken from pan.(Reserve 2 Tbls. onions for garnish)
    3. In same pan combine the water, rice, tomatoes, and remaining green onions.
    4. Bring to a boil.
    5. Place the chicken over the rice.
    6. Reduce heat and simmer for 20 minutes covered.
    7. Top the chicken with the cheese and reserved onions.
    8. Cover and cook for 5 more minutes til cheese is melted and liquid is absorbed.
    9. * Serves 4
