    Dip: Enchilada Dip

    List of Ingredients


    • 1/2 onion, chopped
    • 2 tbsps. butter
    • 2 lbs. ground beef
    • Garlic powder
    • 1 can Mild Old El Paso Enchilada sauce
    • 2 pkgs. dry enchilada sauce
    • 1 can tomato sauce (8 oz.)
    • 2 lbs. brick Velveeta cheese, cubed


    Instructions


    1. In large Dutch oven, saute onion in butter.

    2. Add ground beef and season with garlic powder.

    3. Cook until onion is tender and beef is browned. Drain grease.

    4. Add enchilada sauces and tomato sauce.

    5. Stir in cubed cheese and cook over low hea 2-3 hour, stirring occasionally.

    6. Serve hot, with stone ground tortilla chips.



    Final Comments


    You can also use this to make your own enchiladas by placing a mixture of grated cheddar cheese and minced onion in a softened tortilla, rolling it up, placing it seam side down ina baking dish, and covering the whole batch of them with this meat sauce. Sprinkle grated cheese on top and bake at 350 degrees for 30 minutes. You can get 8 enchiladas in a 6x9 inch pyrex pan.
