    SEAMUS' IRISH SODA BREAD

    List of Ingredients

    1 tsp. butter, softened
    2 c. flour (all-purpose)
    1 Tbsp. sugar
    1/2 tsp. baking soda
    1/2 tsp. salt
    1 c. buttermilk

    Recipe

Heat oven to 400 degrees. Rub butter on cookie sheet or pie pan and set aside. Mix flour, sugar, baking soda and salt together in a mixing bowl. Gradually add milk, stirring with a large spoon until the mixture comes together to form a soft dough. Place dough on pan and pat into a round flat shape, about 6 x 3-inches. With a knife, cut a large X on top almost to the bottom. Bake in middle of oven until golden brown on top, about 45 minutes. Serve with butter. Makes a loaf very, very crusty on outside (rough texture inside). Excellent with stews or soups, hot or cold.
