    TADHG'S IRISH CHILI

    List of Ingredients




    2 lb. lean ground beef
    1 medium onion, sliced and diced
    1 can pitted, sliced ripe black olives
    2 large cans chili beans
    2 medium cans chili con carne
    1/2 c. brown sugar


    Recipe




    Brown and crumble ground beef in iron skillet and break up until large pieces are small pieces. Cover and keep hot while preparing rest of chili. In a large crock or pot, add chili beans, chili con carne, tomatoes and let simmer (low heat) for 1/2 hour or until bubbles begin to pop on surface. Stir quite often so nothing sticks or scorches on bottom. Now sprinkle in the chili powder and brown sugar and mix thoroughly. Add the browned and crumbled ground beef. Mix thoroughly. Add the diced onion. Mix thoroughly. Now simmer (low heat) for 15 minutes. Serve while hot with crackers of choice (saltines, Ritz, Wheat Thins, etc.). Serves 6 to 8. Keep lid on pot to keep hot. Turn off cooking heat. Sprinkle diced olives over top of each bowl. Remainder, if any, can be frozen.
