Candied Yams - Yankee Style

Easy and so good! Serves 8
List of Ingredients
4 to 5 lg. sweet potatoes
�1 stick butter or margarine
�1 1/2 c. brown sugar
�2 tbsp. waterRecipe

�Peel potatoes, slice in half lengthwise and boil for 15 minutes,
�� fork tender but not well done.�
Drain.� In a large skillet melt
�� butter on medium heat.� Add brown sugar and stir until butter and
�� sugar are well combined.� Stir in water, bring to a boil on medium
�� heat and cook approximately 5 minutes.� With mixture at a continuous
�� boil add potatoes, turning occasionally to coat both sides.
�� Continue cooking until syrup thickens and potatoes are coated well.
�� (If mixture is slow to thicken, increase heat but watch carefully to
�� prevent burning.)�
