    Mexican Flan

    Our family loves flan. This is a rather dense version. This is seldom found like this in Mexico nowadays because most restaurants use the mix.

    List of Ingredients

    • 1/2 cup sugar
    • 2 cups milk or (even better) 1/2 and 1/2
    • 4 eggs
    • 2/3 cup sugar
    • 1 teaspoon vanilla
    • pinch salt


    1. Caramelize sugar and put into bottoms of 6 custard cups.
      Scald milk. Meanwhile, mix eggs, sugar, salt and vanilla. Stir scalded milk into egg mixture. Strain into custard cups. Bake in water bath at 350F. for about 30 minutes. Watch closely during last of baking so it doesn't over cook and get watery. Makes 6.
