    CANMOM somersize boards

    List of Ingredients




    4 cups fresh rhubarb, cut up (I used a food processor for smaller bits)
    1/2 teaspoon salt
    2 cups Splenda (or 6 Tablespoons Somersweet, or whatever sweetener you prefer that results in the equivalent of 2 cups of sugar)
    3/4 cup zero-carbohydrate protein powder (I used Bio-Plex brand whey protein isolate)
    1 teaspoon cinnamon
    1/3 cup butter

    Recipe



    Heat oven to 350 degrees.
    Place rhubarb in ungreased baking dish (about 8" x 8"). Sprinkle with salt.
    Measure sweetener (Splenda, Somersweet, whatever), protein powder and cinnamon into a bowl. Add butter and mix thoroughly until mixture is crumbly. Sprinkle evenly over rhubarb. Bake for 40 to 50 minutes, until topping is a rich golden brown. Serve warm with cream or Level One ice cream.
