Very best Spanish Rice

1/2 c chopped onion
3 c raw califlower rice (just shred raw cal in food proc)
1 pnt. stewed tomatoes OR 2 c canned tom +green and red pepper chopped
1 t Paperika
garlic salt + pepper to taste
Brown bacon till crisp and leave in pan - add onions cook till trans- add "rice" and cook about 2 min. add stewed tomatoes and spices - put in 350 deg. oven - UNCOVERED for 2 hrs -you totally cannot tell the difference from real rice!!!
The reason you will cook it for 2 hrs is because it takes that long to really cook it well- tried pre-cooking but it really gets mushy - the time thing really is a bother but I'm sure you will agree it was worth it - also don't drain out any more of the bacon fat than you really have to because this is what really gives it such great flavor!! This is one of the tastiest recipes I have ever somercised- let me know if anyone tries it - I added extra red peppers and served it with grilled pork chops and a salad- great meal!!!
