    Fettuccine Verde

    List of Ingredients

    • 8 oz. of fettucinne
    • Boiling salt water
    • 6 tbs. butter
    • 1 cup sliced green onions (shallots) including tops
    • 2 cloves of garlic, minced or pressed
    • 1 cup whipping cream
    • 1 1/2 cups of grated Parmesan cheese
    • Salt and pepper to taste
    • 1/8 tsp. of ground nutmeg


    1. Cook fettucinni as per instruction
    2. While noodles are cooking, melt butter in a wide fying pan over medium-high heat
    3. Add green onions and garlic and cook stirring for 2 minutes
    4. Add cream and boil rapidly until slightly thickend and large shiny bubbles form (about 2 minutes)
    5. Add hot drained noodles to pan and toss lightly
    6. Add 1/2 cup of cheese and toss until noodles are evenly coated
    7. Add another 1/2 cup cheese and salt and pepper to taste and toss again
    8. Sprinkle nutmeg and remaining 1/2 cup cheese over top just before serving
