    Italian Roast Chicken

    List of Ingredients

    • 1 5-6 lb. chicken
    • 2 springs of Rosemary (2 tbs. dired also works)
    • 6 sage leaves (1 tsp. dried also works)
    • 1/2 cup olive oil
    • 1 lemon
    • 2 carrots, chopped
    • 1 large onion, chopped
    • 1 red pepper, chopped
    • 4 medium potatoes, chopped
    • 1 tsp. salt
    • 1 tsp. black pepper


    1. Finely chop Rosemary, sage and garlic
    2. Put in a bowl and add 1/2 cup of olive oil and mix well
    3. Season chicken in and out with salt and pepper
    4. Put some of the mixture in the cavety with 1/2 of the lemon
    5. Bast outside of the chicken with mixture
    6. Sqeeze balance of lemon over mixture
    7. Add the balance of the mixture to the pan
    8. Cook in a 450 degree oven for 1 hour
    9. Take out chicken and add vegetables
    10. Put back in the oven and cook an additional hour
