    List of Ingredients

    • 2 1/2 cups fusilli or penny
    • 1/4 cup vegetable oil or olive oil
    • 5 cloves garlic, minced
    • 1 large onion, finely chopped
    • 1 red bell pepper, finely chopped
    • 1 yellow bell pepper, finely chopped
    • 2 tbsp. red wine vinegar
    • 1/3 cup mozzarella cheese
    • 1/3 cup fresh parsley, chopped
    • 1/3 cup black olives, chopped
    • Salt & pepper to taste


    1. Cook pasta according to directions
    2. Drain and rinse in cold water
    3. In a large skillet heat oil, saute garlic, onion and peppers until tender
    4. Add vinegar and cook 3 minutes longer
    5. Stir in mozzarella cheese and parsley
    6. Saute until heated through
    7. Season with salt & pepper
    8. Pour vegetable mixture over chilled pasta and combine well
    9. Add olives and toss gently

    Final Comments

    Chill at least 2 hours before serving
