    List of Ingredients


    • 1 Italian sausage, casting removed
    • 2 tsp. vegetable oil
    • 2 tsp. garlic, crushed
    • 1\2 cuponions, chopped
    • 1\3 cup carrots, chopped
    • 1\3 cup celery, chopped
    • 1 cup tomatoes, diced
    • 4 cups chicken stock
    • 1 tsp. basil, dried
    • 1\2 tsp. oregano, dried
    • 1\2 tsp. parsley, dried
    • 2 cups red kidney beans, drained
    • 1\2 cup small shell pasta
    • 3 tbs. parmesan cheese, grated


    Instructions


    1. In a large sauce pan heat oil, saute garlic, onion, sausage, carrots and celery for 5 minutes
    2. Add tomatoes, stock, basil, oregano, parsley and 1 cup of beans
    3. Mash remaining beans and add to the soup
    4. Simmer 15 minutes, stirring occasionally
    5. Add pasta and simmer for another 5-8 minutes, until pasta is done
    6. Add cheese and serve


    Final Comments


    You can prepare early in the day but do not add pasta until 10 minutes before serving
