    Banana: Banana Oatmeal Pecan Bread

    1 teaspoon baking powder
    1 teaspoon baking soda
    1/2 teaspoon salt
    1/2 cup rolled oats
    2 cups whole wheat flour
    1/2 cup butter or margarine, softened
    1/4 cup honey
    2 eggs
    3 bananas, mashed
    1/4 cup buttermilk
    1 teaspoon vanilla extract
    1 cup chopped pecans

    In a medium bowl, combine baking powder, baking soda, salt, oats, and flour; mix well.� Set aside. Preheat oven to 350�F.� Spray a 9x5-inch loaf pan with non-stick vegetable spray. In a large mixing bowl cream butter and honey until light and fluffy.� Add eggs, one at a time, beating well after each addition.� Stir in bananas, buttermilk, and vanilla.� Add flour mixture, stirring until just moistened.� Stir in pecans.� Pour into prepared loaf pan. Bake for 55 minutes or until a tester inserted in the center comes out clean.� Cool in loaf pan for 5 minutes.� Remove from loaf pan; cool completely on a wire rack.
