Cranberry: Cranberry Orange Cheese Bread

2 cups self-rising flour
1 cup sugar
2 tablespoons grated orange rind
3 tablespoons butter or margarine, cut into small pieces
1-1/2 cups shredded Cheddar cheese
1 cup cranberries
1 egg, lightly beaten
3/4 cup buttermilk Recipe
Preheat oven to 350�F.� Spray a 9x5-inch loaf pan with non-stick vegetable spray. In a large mixing bowl, combine flour, sugar, and orange rind.� Cut in butter until mixture resembles coarse crumbs.� Add 1 cup cheese and cranberries.� In small bowl, beat egg into buttermilk; add to flour mixture, stirring until just moistened.� Spoon into prepared loaf pan.� Sprinkle with remaining cheese. Bake 1 hour or until loaf is golden brown and begins to pull away from the sides of the pan.� Cool in pan for 10 minutes.� Remove from pan; cool completely on a wire rack.
