    Desserts-Cake: Almond Cake in Honey Syrup

    List of Ingredients

    4 ounces butter
    8 ounces sugar
    4 eggs, lightly beaten
    4 ounces ground almonds
    1 teaspoon ground cinnamon
    8 ounces fine semolina

    SYRUP:
    8 ounces sugar
    1/2 pint water
    3 tablespoons lemon juice
    2 ounces blanched almonds, split

    Recipe

    Preheat oven to 350�F. Cream butter and sugar together until soft and creamy. Beat eggs into mixture, then add ground almonds, cinnamon and semolina. Line an 18 x 28 cm Swiss roll tin with greased paper, allowing paper to stand about 1 inch higher than tin. Spread mixture in tin, decorate with split almonds, and bake for about 1 hour. Prepare syrup: Dissolve sugar and water in a pan and then add lemon juice and bring to boil. Simmer for about 5 minutes until reduced slightly. Remove pan from heat and allow to cool slightly. Cut cake into squares and then pour over syrup. Serve when cooled.
