    Apple Pecan Chicken Roll-Ups

    1/2 cup apple juice
    1/2 cup brown rice
    1/2 cup finely chopped apple
    1/4 cup pecans, chopped
    3 tablespoons sliced green onions
    4 boneless, skinless chicken breasts halves
    1 tablespoon vegetable oil

    Recipe



    Preheat oven to 400 degree F. Spray a 9x9-inch baking pan with non-stick vegetable spray.
    In small saucepan, bring apple juice to a boil.� Add rice, cover and simmer 8 to 10 minutes or until liquid is absorbed.� Stir in apple, pecans and green onions.� Remove from heat.

    With the flat edge of a meat mallet, flatten each chicken breast to about 1/4-inch thickness.� Place 1/4 rice mixture on each chicken breast.� Roll up, tucking in edges.� Secure with toothpicks. In a large skillet, heat oil.� Add chicken and cook 4 to 5 minutes or until lightly browned.� Place in prepared baking pan. Bake 20 to 25 minutes or until chicken is no longer pink in the center. Serves 4
