Baked Turkey Croquettes

2 tablespoons butter or margarine
3 tablespoons all-purpose flour
3/4 cup milk
2 cups chopped cooked turkey
1 egg yolk lightly beaten
1/4 teaspoon salt
1 egg
2 teaspoons water
1/2 cup bread crumbs
1/4 teaspoon ground sage
2 tablespoons butter or margarine melted
Recipe
In a large skillet, melt 2 tablespoons butter.� Add flour, stirring until well blended.� Cook, stirring constantly, for 1 minute.� Slowly add milk; cook, stirring constantly, until boiling.� Let sauce cool.� Add turkey, egg yolk, and salt.� Form into 12 small cones.
Preheat oven to 350�F.� Spray a baking sheet with non-stick vegetable spray.
In a small bowl, combine bread crumbs and sage.� In another small bowl, combine egg and water, beating until blended.
Roll cones in bread crumb mixture, then dip in egg mixture, and roll again in bread crumb mixture.� Place on prepared baking sheet.� Drizzle with melted butter. Bake for 40 minutes. Serves 6
