Rabbit: Cajun Rabbit Stew

2 medium rabbits�
8 cups water�
1-1/2 tablespoons salt�
1-1/2 tablespoons red pepper�
1-1/2 cups cooked corn�
2 small onions (chopped)�
5 small potatoes (quartered)�
2-1/2 cups tomatoes (diced)�
1/2 pound salt pork�
1-1/4 tablespoons butter�
1 tablespoon flour
1 tablespoon thyme
1 tablespoon oregano
4 tablespoons Worcestershire sauce
1 teaspoon Peychaud Bitters
5 cloves chopped garlicRecipe
Bring water to a boil in a heavy pot. Add rabbit, salt, pepper and spices.� Bring back to boil and add corn, onion, tomatoes and salt pork.� Cover and cook on low heat for 1 hour. Add potatoes and cook 30 minutes.� Stir occasionally to prevent sticking. Mix flour and butter into paste, and stir into stew.�
Simmer about 20 minutes.�
