2 rabbits cut up in pieces�
1/2 tsp. oregano�
1/4 tsp. mace�
flour�
1/4 tsp. powdered cloves�
salt and pepper�
4 Tb. extra virgin olive oil�
1/2 lb. mushrooms�
2 onions, sliced
3 cloves chopped garlic�
Tb. butter�
12 oz cup tomato sauce�
12 olives sliced�
1 rib celery sliced�
2 Tb chopped parsley�
1/2 cup white wine�Recipe
Shake the rabbit pieces in a bag with flour, salt, and pepper.�
In a casserole dish saut� the pieces in oil until golden brown. Cook until golden.�Add the onions, green pepper, celery, and parsley. Saut� for 2 minutes.�Add the wine, oregano, mace, cloves, and cover, and simmerfor 10-15 minutes-until meat is tender.�
In a separate pan saut� the mushrooms in butter for a few minutes,�Add the tomato sauce. Stir together with the sliced olives.�
