Venison: Venison Salisbury Steak

List of Ingredients
5 lbs of back strap tenderloin,� shoulder steaks--elk, deer, moose or antelope�
2 large onions, cut into thin, long strips�
2 cups chopped celery
4 large, fresh tomatoes,�
or two 8-oz. cans whole, peeled tomatoes�
zest of 1 lemon and the juice
1/4 cup olive oil�
salt & pepper�
Worcestershire sauce�Recipe
Heat oil in large saucepan and brown steaks on both sides.�
Add rest of ingredients.�
Cover, turn heat to medium-low and simmer for 30-45 minutes.�
Serve fresh over a hot bed of rice or noodles.�
