    Carrot: All Time Best Carrot Cake

    1/8 cup cocoa powder
    2 cups self-rising flour
    2 cups sugar
    4 eggs
    1 teaspoon vanilla extract
    1 1/2 cups vegetable oil
    2 cups grated carrots
    1 cup crushed pineapple undrained
    Cream Cheese Icing (below)

    Preheat oven to 350�F.� Spray 3 9-inch cake pans with non-stick vegetable spray.

    In a large bowl, combine cocoa powder, flour, and sugar.
    In a medium bowl, combine eggs, vanilla, and oil; beat until blended.� Add to flour mixture; mix until well blended.� Stir in carrots and pineapple.� Pour into prepared cake pans.

    Bake for 30 minutes or until a tester inserted in the center comes out clean.� Cool in cake pans for 10 minutes.� Remove from cake pans; cool completely on a wire rack.� Fill and frost the cake with Cream Cheese Icing.

    CREAM CHEESE ICING
    1 8-ounce package cream cheese, � softened
    1 cup butter or margarine, softened
    1 cup confectioners� sugar
    1/2 cup flaked coconut
    1 cup chopped walnuts
    In a medium bowl, combine cream cheese, butter, and confectioner�s sugar; beat until smooth and well blended.� Fold in coconut and walnuts.
