It's hard to find vegan tamales, unless you make them yourself, but
they're a lot of work. Here's a recipe for a vegan tamale pie that's
easy to make, you don't have to unwrap it before you eat it, and it
makes enough to share with friends.
* 3/4 cup onions, chopped
* 2 TBSP olive oil
* 1 cup cooked rice
* 1 can chili beans, with liquid
* 1 can corn, drained
* 2 8-oz cans tomato sauce
* 4 tsp chili powder
* 1/2 tsp salt
* 1 tube prepared polenta
Recipe
1. In large skillet, saut� onions in olive oil.
2. Add rice, beans, corn, tomato sauce, chili powder, and salt. Simmer
for 15 minutes.
3. Place rice mixture in a casserole dish and top with flattened
polenta.
4. Bake at 350 degrees Fahrenheit for 30 minutes.
