    Creamy Shrimp on Crackers

    Recipe Introduction

    "Tangy cream cheese and sour cream play up the shrimp's natural sweetness in this traditional appetizer from Omar Tate, chef-owner of the pop-up dinner series Honeysuckle. Hot tip: Poach your shrimp and make your dressing in advance to save time, but don't mix them until an hour before serving, or the shrimp will get tough."

    List of Ingredients

    ◦ 1 pound shrimp, peeled, deveined
    ◦ 1 tablespoon plus � teaspoon Diamond Crystal or 2 teaspoons Morton kosher salt
    ◦ 3 tablespoons sour cream
    ◦ 2 tablespoons cream cheese, room temperature
    ◦ � cup finely chopped celery
    ◦ 2 teaspoons extra-virgin olive oil
    ◦ 1 teaspoon finely grated lemon zest
    ◦ 1 tablespoon fresh lemon juice
    ◦ 32 butter crackers (such as Town House)
    ◦ 1 tablespoon Barbecue Seasoning or paprika

    Recipe

    Combine shrimp, 1 tablespoon Diamond Crystal or 1 � teaspoons Morton kosher salt, and 1 quart water in a medium pot. Set over medium-low heat (you want water to slowly come to a bare simmer) and cook until shrimp are just cooked through, 10 to 12 minutes total. Drain and transfer shrimp to a plate; let cool.

    Meanwhile, mix together sour cream, cream cheese, and remaining � teaspoon Diamond Crystal or � teaspoon Morton kosher salt in a medium bowl. Mix in celery, oil, lemon zest, and lemon juice.

    Slice chilled shrimp in half lengthwise, then crosswise into �-inch-thick pieces. Fold shrimp into dressing. To serve, top each cracker with 1 tablespoon dressed shrimp; sprinkle with seasoning.

    ❧ Goes-on-Everything Barbecue Seasoning:

    "Make a double batch and keep this spicy-sweet blend on hand for all grilled meats and vegetables."

    ◦ � cup smoked paprika
    ◦ 2 tablespoons light brown sugar
    ◦ 2 teaspoons chili powder
    ◦ 2 teaspoons garlic powder
    ◦ 1 � teaspoons cayenne pepper

    Whisk paprika, brown sugar, chili powder, garlic powder, and cayenne in a small bowl to combine. (Do Ahead: Seasoning can be made 1 month ahead. Store airtight at room temperature.)
