Banana Fritters

Recipe Introduction
"Fritters, which are much like beignets, are a favorite breakfast item in and around New Orleans. Be sure to use clean, fresh vegetable oil when frying."
List of Ingredients
� 2 medium bananas, ripe but firm, peeled and coarsely chopped
� 1 cup all-purpose flour
� 1 large egg, lightly beaten
� 1/4 tsp salt
� 2 tsp baking powder
� About 1/2 cup milk
� 3 cups vegetable oil
� Confectioners' sugar for sprinkling
� 1/2 tsp ground cinnamon
Recipe
1. Combine the bananas, flour, egg, salt, and baking powder in a medium mixing bowl. Add enough milk to achieve the consistency of a thick pancake batter.
2. Heat the oil in a large deep pot or deep fryer to 360�F. Drop the batter by spoonfuls into the hot oil, a few at a time, and fry until the fritters rise to the surface of the oil and are golden brown, turning 2 or 3 times.
3. Drain on paper towels and sprinkle with confectioners' sugar and cinnamon. Serve immediately.
Makes about 20 fritters.
