    Vietnamese: Greens with Garlic & Oyster Sauce

    List of Ingredients


    • 1 lb. greens, such as chard, mustard or kale
    • 2 Tbsp vegetable oil
    • 2 Tbsp minced garlic
    • 2 Tbsp oyster sauce
    • About 1/4 tsp salt


    Instructions


    1. Remove the thick ends of the stems, then chop the greens coarsely into about 2-inch pieces.

    2. Heat the oil in a large heavy skillet over medium-high heat.

    3. When hot, add the garlic and saut� 30 seconds. Add the greens and oyster sauce. Toss several times to coat the greens evenly in the sauce. Cook until the greens are done but still green and crunchy, 2 to 3 minutes. Salt to taste. Remove from the heat and transfer to plates.

      Makes 3 to 4 side-dish servings.
