    Spicy Zucchini Chili (version 2)

    List of Ingredients




    1 pound of OP ground turkey sausage
    4 larger cloves of garlic, crushed
    6 1/2 cups of cut up Zucchini (quartered lengthwise then sliced)
    2 cups chopped onion
    2 1/2 cups of chopped red pepper
    3 cans of no salt added stewed tomatoes
    1 can of no salt added tomato sauce (opt)
    3-4 jalapeno peppers chopped very small
    1/2 cup of fresh, chopped cilantro
    2 tablespoons of chili powder (I use frontier, has no salt)
    1 tablespoon of curry powder (also use frontier for this)
    2 teaspoons ground red pepper
    1 tablespoon black pepper
    1/4 cup of red wine, cider or balsamic vinegar
    4 tablespoons of splenda sweetner
    (optional) 1/2 can of crushed pineapple in its own juice. (only eaten on cardio days, would need to omit splenda.

    OP Salsa (added to indivdual servings later)

    Start to brown your turkey with the crushed garlic, then add the remaining ingredients (except zucchini), bring to boil, cover and simmer for about 1 1/2- 2 hours. Then add the zucchini and cook an additional 30-45 minutes. This makes five servings that give you 2 0z of protein each.

    Before each meal add 2-4 tablespoons of fresh homemade OP salsa and serve over rice. This gives you 2 0z protein, 1/2 cup carb and free veggies. It's also an awesome fat burning meal.
