    2 gallons pickles
    2 c salt
    3 gallons boiling water (separated)
    1 T. powdered alum
    3 pints strong vinegar
    6 pts. sugar
    1/2 oz. celery seed
    1 oz. stick cinnamon
    3 c. sugar (separated)

    Recipe



    Cut pickles in cubes or split enough to fill 2 gallon jar. Pour over them 2 cups salt and 1 gal boiling water. Let stand one week. Skim when necessary. 8th day, drain and pour over them 1 gal hot water with 1 T. powdered alum added. Next day drain and pour over them 1 gal boiling water. Next day drain. Clean jar and pour over them syrup made of 3 pints strong vinegar, 6 pts. sugar, 1/2 oz. celery seed, 1 oz. stick cinnamon. 12th, 13th, and 14th day drain, reheat liquid, adding one cup sugar each day. Seal hot.
