Herb Rub For Fish
Makes 2-3 tbsp.
1 tbsp. paprika
1 1/2 tsp. finely chopped fresh thyme or 1/2 tsp. dried leaf thyme, crumbled
1 1/2 finely chopped fresh oregano or 1/2 tsp. dried leaf oregano, crumbled
1 tsp. salt
1/2 tsp. sugar
1/4 tsp. red pepper (cayenne)
1/4 tsp. freshly ground black pepper
In a small bowl, combine all ingredients Use immediately or pour into container with tight-fitting lid. Cover tightly and refrigerate up to 3 weeks. To use, rub evenly over surfaces and cavity of fish. Cover and
refrigerate 30 min.; then grill.
