Blueberry Kuchen (Riverside Hospital Auxiliary)
3 cups flour
1-1/2 cups sugar
4 teaspoons baking powder
1/2 teaspoon salt
1/2 cup shortening
2 cups blueberries
1-1/3 cups milk
2 eggs
1 teaspoon ground nutmeg
1 teaspoon grated lemon peel
2 teaspoons pure vanilla
1/4 cup sugar
Preheat oven to 350�F. Grease a 9x13-inch baking pan.
Combine all dry ingredients in mixer bowl. Add shortening and milk; beat 3 minutes, scraping sides and bottom. Add eggs, vanilla, nutmeg and lemon peel. Beat 2 minutes. Pour into prepared pan. Sprinkle top with blueberries that have been mixed gently with the 1/4 cup sugar. Bake at 350� 40-45 minutes; remove from oven and sprinkle with powdered sugar when cooled slightly.
