    Southern Skillet Pie

    1 cup flour
    1-1/2 teaspoons baking powder
    1/2 teaspoon salt
    3 tablespoons shortening
    1/3 cup milk
    6 fresh peaches, sliced
    1/2 cup sugar
    1/2 teaspoon salt
    1/4 teaspoon ground cinnamon or nutmeg
    1-1/2 tablespoons butter
    1 tablespoon flour (for thickening)

    Sift dry ingredients; cut in shortening; add milk. Roll dough out on a floured board to 1/4-inch thickness and place in an 8-inch iron skillet. Allow dough to hang over the sides. Put sliced peaches into crust.
    Mix together the sugar, salt, cinnamon or nutmeg, butter and flour; sprinkle over peaches. Fold the hanging dough toward the center of pie, leaving small space open in middle. Bake at 425� for 25 minutes.

    Serves 6
