    Hot Pepper Jelly

    1-1/2 cups cider vinegar
    1 cup coarsely chopped red or green bell peppers
    2 tablespoons hot pepper sauce
    6-1/2 cups sugar
    1 (3-oz.) envelope liquid fruit pectin
    2-3 drops red or green food coloring
    Melted paraffin

    In blender container or food processor, combine vinegar, red or green peppers and hot pepper sauce. Cover and process until smooth.

    In heavy 6-quart saucepan, combine pepper mixture and sugar. Cook over medium heat, stirring constantly, till just before boiling. Continue cooking and stirring for 5-10 minutes until sugar dissolves.

    Remove from heat, immediately stir in pectin and coloring. Mix well. Skim off foam, and quickly pour into hot sterilized jelly jars. Cover with 1/8-inch of melted paraffin at once. When cool, cover with loose lids.

    Makes six 8-ounce jars
