    Pork w/Caramelized Onions T&T

    If literally translated from Chinese and the dish s/b called Onions and Pork Chops

    List of Ingredients




    5-6 good sized pork chops or cutlets-about 1/2 inch thick at least.
    1 big onion sliced (I use vidalia onions)
    Chinese oyster sauce

    Recipe



    Pound the pork on both sides with a meat hammer/tenderizer. Afterwards, slice meat into 1/2 inch wide and 2 inch long strips. If using pork chops, don't discard the bones-cut it in half. Marinate the meat and bones with 2-3 tablespoon of soy sauce, 1 tablespoon of chinese oyster sauce, 1/4 teaspoon of salt, and 1/2 teaspoon of sugar. Mix well and remove any excess sauce. Add enough cornstarch to coat all the strips and bones.

    Heat up a pot of oil. We use canola and fry pork in a single layer batch until golden brown. Remove and drain.

    While the last batch is cooking, in a cast iron pan (you'll need the big one). Heat the pan nice and hot and then add enough oil to coat bottom. Add the onions and stir frequently over med low flames until translucent and lightly browned. Then add 3-4 big heaping tablespoons of Chinese oyster sauce and stir with the onions until well coated and thickens about 2 mins. Now add about 2 tablespoon of water and stir and add the pork chunks into the sauce. Serve with steamed rice.

    Note: if you are watching your calories, you can also grill or pan fried the pork chops. Cook them whole and the cut them into chunks before adding to the onion sauce.
