Golden Tomato Gazpacho

Our local paper had some tomato recipes in it, and since everyone is wondering what to do with their crops, I thought I would post a few. They aren'e T & T because my neighbor hasn't dropped off any of his tomatoes yet...
List of Ingredients
3 lbs. ripe golden tomatoes, cored and cut up
1 golden bell pepper, seeded and cut up
3 cloves garlic
1/4 cup roughly chopped blanched almonds
1 English cucumber, peeled and cut up
1/2 cup sweet onion (such as Vidalia) cut up
3 cups cold chicken stock
1/4 tsp. saffron threads, crumbled
1/4 tsp. cayenne
1/2 tsp. freshly ground pepper
1/2 cup extra-virgin olive oil
1/4 cup sherry vinegar
Garnishes: small croutons, thinly sliced chives, finely diced red and/or yellow pepper
Recipe
Combine tomatoes, pepper, garlic, almonds, cucumber and the onion in a food processor fitted with the metal blade. Pulse until mixture is pureed. strain through a food mill to remove seeds and skins. Pour into a large bowl and whisk in chicken stock, saffron, salt, cayenne and pepper. Blend well, then vigorously whisk in olive oil and vinegar to make a creamy mixture. Adjust seasonings and chill thoroughly.
Serve garnished with croutons, chives and peppers. Makes 8-10 servings.
